This week’s menu includes a super simple pad thai recipe that I found on Pinterest. I’ve been making it according to the directions for quite some time, but today I bulked it up with more veggies. I can’t believe I didn’t think of that before now!
Start with soaking your rice noodles according to package directions.
Chop up all the veggies and get them ready to sauté.
Meanwhile, sauté the garlic, then add the eggs to make scrambled eggs. Remove from pan. Add more oil and veggies and sauté until cooked through. Add sauce ingredients, drained noodles and eggs. Toss around and top with cilantro and peanuts. Couldn’t be easier!
