Roasted Summer Squash and Zucchini

  • 1 medium yellow squash, cut into cubes
  • 1 medium zucchini, cut into cubes
  • 1 medium onion, cut into slices
  • 2 Tablespoons olive oil


  • Toss zucchini, yellow squash and onions with olive oil and Salt and Pepper to taste.
  • Put on half sheet pan in single layer.
  • Bake in 425 degree oven for 20 minutes. Stir and cook another 20 minutes until browned.
