Roasted Summer Squash and Zucchini
- 1 medium yellow squash, cut into cubes
- 1 medium zucchini, cut into cubes
- 1 medium onion, cut into slices
- 2 Tablespoons olive oil
- Toss zucchini, yellow squash and onions with olive oil and Salt and Pepper to taste.
- Put on half sheet pan in single layer.
- Bake in 425 degree oven for 20 minutes. Stir and cook another 20 minutes until browned.
