Roasted Summer Squash and Zucchini

  • 1 medium yellow squash, cut into cubes
  • 1 medium zucchini, cut into cubes
  • 1 medium onion, cut into slices
  • 2 Tablespoons olive oil
  1. Toss zucchini, yellow squash and onions with olive oil and Salt and Pepper to taste.
  2. Put on half sheet pan in single layer.
  3. Bake in 425 degree oven for 20 minutes. Stir and cook another 20 minutes until browned.
