Pancake Syrup

My son had a friend over for a sleepover last night.  I knew breakfast for a kid outside our family couldn’t consist of sautéed veggies.  The problem was that we just got back from Christmas in Michigan yesterday and my fridge and pantry contained zero eggs, no syrup, no bread, and just about 1c of milk.  That ruled out cereal, pancakes, french toast and anything else breakfastish I could imagine.  But then I remembered that when my baby was egg free, I always used 1T. chia seeds and 3T. water mixed up and set out for about 5 minutes to replace an egg in baking.  Bingo!  I could make grandma’s pancake recipe with the scant 1 cup of milk in my fridge.  Plus, my mom always made our syrup from scratch with sugar, water and maple flavoring.  I usually use real maple syrup, but my gallon ran out and I’ve yet to write a letter to the sweet Amish family in Michigan where I’ve purchased in the past.  And I was pretty sure I had a random bottle of maple flavoring I bought just in case I was ever desperate enough to try to make my own.  So here it is — and can I tell you that it was a huge hit?  The kids seriously gobbled it up and all was well!     Continue reading →

Corned Beef www.slipnotdesigns.wordpress.comI love corned beef, but I can’t stand how salty and fatty it can be.  By cooking it myself, I’m able to control both of those things!  I found this method a few years ago, and I’ve never looked back!  It seems a bit redundant to both boil and bake, but it takes care of the saltiness and yet has the yummy baked taste, rather than just that boiled taste.  I know it seems like a lot of work, but each time you bring it to a boil, it only takes 10-15 minutes, so you can do it while you clean up something else.  Try it!  I think you’ll agree that it’s worth the extra step!

I don’t really like homemade brownies.  I love how the box mix is chewy with that glossy top and slightly crunchy edges.  When I make them from scratch, I don’t seem to be able to replicate that….until I found this recipe.  It was a hit so I’m sharing it with you this Valentine’s Week!!  Quick note — Mine were very dark because I used black cocoa powder, so don’t be surprised if yours look more brown than black.

Buttermilk Whole Wheat Buttermilk Belgian Waffles

IMG_3509I love those belgian waffles you get at the free hotel breakfasts.  I finally bought the belgian waffle iron, but my waffle recipe was seriously lacking.  I’ve tried so many and just had not yet hit upon one I loved.  In addition to that, I really prefer to use white wheat flour to bump up the nutritional value, but it usually makes baked goods taste more dense.  For a “once in a while treat” like waffles, I will just use plain old white flour.  But I really wanted to move toward fully embracing wheat all the time.  I had buttermilk in my fridge and just like my whole wheat pancake recipe, store bought buttermilk makes everything yummier and fluffier, even when using wheat flour.  So my Pinterest search began.  I hit upon this recipe and I’m hooked!  It was light, it was fluffy,  and even with my addition of wheat flour, it was not dense, it was not wheaty (thanks to the white wheat and buttermilk).  It’s my new favorite!  Here’s my adapted recipe.

Chewy Granola Bars

I grew up with a Mom who baked everything from scratch.  This is one of the recipes that sticks out most prominently in my childhood.  Chewy granola bars!  They are not a replacement for the kind of granola bars you get from the store.  At least, I’ve never viewed them that way.  They are thick and chewy and delicious!!  I will show the recipe as written and put my current changes in parenthesis:
