New York Wrap - www.slipnotdesigns.wordpress.comI promised some corned beef leftover recipes when I posted about the corned beef that’s perfect every time.   But then I left on vacation and this languished in my iPhone camera until now.  So if you’re like me and you threw your corned beef leftovers in the freezer, try this!  I used to work at an Irish Pub and this was one of my favorite things to order.  They called it a New York wrap, and it’s essentially cold corned beef, swiss cheese, cole slaw and 1,000 Island wrapped up in a large wrap.  I like my 1,00 Island separate to dip it in.  If you’re in the mood for the taste of St. Patrick’s Day a couple weeks later, here’s your meal!

New York Wrap - www.slipnotdesigns.wordpress.comPut slices of swiss cheese on a large, sandwich size tortilla or wrap.  I used green because my kids thought it was fun for St. Patrick’s Day.  I usually put it up toward one side, because as I roll it, the fillings move and this way they don’t squish out the end!

Add your left over corned beef

New York Wrap - www.slipnotdesigns.wordpress.comAnd cole slaw.  I usually make my own or get it from KFC, but I was leaving on vacation that morning.  I had no time to make any and KFC wasn’t open yet.  So I bought some at the grocery store.  Mistake.  I have to say it kind of ruined it for me.  There was a flavor in it that I hated.  But you live and learn, right?  After you add cole slaw, you can put the 1,000 Island on the wrap or serve it on the side for dipping.  Fold in the sides of your wrap and begin to roll it from the end shown here.  It starts to slide a little and ends up with the filling in the middle.  Cut in half and enjoy!
