										<content:encoded><![CDATA[<p style="text-align: center;">My son had a friend over for a sleepover last night. &nbsp;I knew breakfast for a kid outside our family couldn&#8217;t consist of sautéed veggies. &nbsp;The problem was that we just got back from Christmas in Michigan yesterday and my fridge and pantry contained zero eggs, no syrup, no bread, and just about 1c of milk. &nbsp;That ruled out cereal, pancakes, french toast and anything else breakfastish I could imagine. &nbsp;But then I remembered that when my baby was egg free, I always used 1T. chia seeds and 3T. water mixed up and set out for about 5 minutes to replace an egg in baking. &nbsp;Bingo! &nbsp;I could make <a href="https://allthelittlereasons.com/?p=742">grandma&#8217;s pancake recipe</a> with the scant 1 cup of milk in my fridge. &nbsp;Plus, my mom always made our syrup from scratch with sugar, water and maple flavoring. &nbsp;I usually use real maple syrup, but my gallon ran out and I&#8217;ve yet to write a letter to the sweet Amish family in Michigan where I&#8217;ve purchased in the past. &nbsp;And I was pretty sure I had a random bottle of maple flavoring I bought just in case I was ever desperate enough to try to make my own. &nbsp;So here it is &#8212; and can I tell you that it was a huge hit? &nbsp;The kids seriously gobbled it up and all was well! &nbsp; &nbsp; <span id="more-2878"></span>&nbsp;&nbsp;<a href="https://i0.wp.com/allthelittlereasons.com/wp-content/uploads/2015/12/pancakesyrup-3.jpg?ssl=1"><img data-recalc-dims="1" fetchpriority="high" decoding="async" class="alignnone  wp-image-2879 aligncenter" src="https://i0.wp.com/allthelittlereasons.com/wp-content/uploads/2015/12/pancakesyrup-3.jpg?resize=819%2C544&#038;ssl=1" alt="pancakesyrup-3" width="819" height="544" srcset="https://i0.wp.com/allthelittlereasons.com/wp-content/uploads/2015/12/pancakesyrup-3.jpg?w=500&amp;ssl=1 500w, https://i0.wp.com/allthelittlereasons.com/wp-content/uploads/2015/12/pancakesyrup-3.jpg?resize=300%2C199&amp;ssl=1 300w, https://i0.wp.com/allthelittlereasons.com/wp-content/uploads/2015/12/pancakesyrup-3.jpg?resize=150%2C100&amp;ssl=1 150w" sizes="(max-width: 819px) 100vw, 819px" /></a>Mix the brown sugar, white sugar and water.</p>

<p style="text-align: center;">*As a side note, the first picture is the amount leftover after 3 little people and I ate one batch of pancakes. &nbsp;It&#8217;s pretty thin when it&#8217;s hot, but thickens up as it cools. &nbsp;I will store mine in the pantry since it&#8217;s all shelf stabilized ingredients. &nbsp;(I don&#8217;t have a microwave and cold syrup isn&#8217;t appealing to me.) &nbsp;But I would recommend that you keep yours in the fridge for safety purposes &#8211; and because I don&#8217;t carry blog liability insurance! &nbsp;Also, after making pancake syrup, I see first hand why this is a special treat and not a daily thing. &nbsp;2 cups of sugar?! &nbsp;Whoa&#8230;</p>

<p>Flu season is crazy right now. &nbsp;All over Facebook, I see posts about people whose families are being ravaged by this multi day yuck that is circling. &nbsp;Having just begun a new business 6 months ago, my husband and I cannot afford to be sick and miss out on work&#8230;and my son leaves for a mission trip in 2 1/2 weeks, so we are no holds barred on the immunity boosting. &nbsp;All my crunchy mama friends have been downing elderberry syrup, so I thought I&#8217;d jump on the bandwagon. &nbsp;The last week or so we&#8217;ve been mixing a couple teaspoons into a small shot of juice and I&#8217;m hoping this superfood will keep the sickies at bay.</p>

<p>Elderberries are helpful due to their crazy vitamin content. &nbsp;They are high in Vitamin A and Vitamin C, contain the antioxidant quercitin, are anti inflammatory and possess antiviral properties. &nbsp;Whew! &nbsp;Worth a try, huh? &nbsp;I <a href="http://www.frontiercoop.com/products.php?cn=Elderberries">buy elderberries through Frontier Co-op</a>. &nbsp;I can buy wholesale through them because I&#8217;m in a group that orders together. &nbsp;I love buying my spices, cocoa powder and teas there. &nbsp;I would imagine you can find them at health food stores, though. &nbsp;It goes without saying that you should make sure you buy them from a reputable source so that you know they are safe to ingest. &nbsp;Don&#8217;t go picking random tiny berries in the woods and making this with them!</p>



<p>There&#8217;s a ton of variations on elderberry syrup online, but I&#8217;ve tasted two before this one and it&#8217;s hands down the favorite for my family. &nbsp;I based it on <a href="http://realfoodrn.com/homemade-elderberry-syrup/">this</a> recipe.</p>



<p class="has-text-align-center">Mix water, elderberries, cinnamon, ginger and cloves and bring to a boil.</p>

		<ol><li>Bring elderberries, water, ginger, cinnamon and cloves to a boil.  Reduce heat to simmer for 45 minutes.</li><li>Mash berries with potato masher and pour through mesh strainer.  Press berry pulp into strainer to make sure to get out as much juice as possible.</li><li>Let cool to just above room temperature.  Add raw honey and mix.</li><li>Use 1-2 teaspoons per day.</li></ol>	</div>
