<p>I went to IHOP once and got these things they call a cinnastack. &nbsp;It was sinful. &nbsp;They should have called it a sin-a-stack. &nbsp;This week IHOP was offering a free small stack if you made a donation to their cause. &nbsp;I tried to go with the kids but there was barely standing room in the lobby because the line was so long! &nbsp;We left and I promised to make the kids IHOP style pancakes this morning. &nbsp;Here&#8217;s what I came up with!<span id="more-2425"></span></p>

<p>First I made <a href="https://allthelittlereasons.com/?p=742">Grandma Ware&#8217;s pancakes</a>. &nbsp;Today I used flax milk with a squeeze of fresh lemon juice in lieu of buttermilk. &nbsp;I also ground the spelt in my vitamix so I could feel like they were a little bit healthy under all that sugar and butter! &nbsp;While those were cooking, I mixed up the cinnamon sugar butter. &nbsp;It was just butter, cinnamon, brown sugar, pinch of salt and vanilla, mashed it up with a fork until it&#8217;s combined. &nbsp;Spread a bit of this on each pancake.</p>

<p>Then I made the drizzle on top and based it loosely on my cream cheese frosting recipe. &nbsp;Butter, cream cheese, milk, powdered sugar, vanilla, pinch of salt whisked together. &nbsp;I ended up adding a bit more milk to mine because the drizzle was less drizzle and more clumpy. &nbsp;See?</p>

<p>It tasted great, though! &nbsp;Anyway, I added a little more milk and got it to be more like this. &nbsp;If you want it even fancier for company, you could put it into a zip top bag, cut off the corner and drizzle it on really pretty.</p>

<p style="text-align: left;">Bring to a boil, then reduce heat and cook about 15 minutes, or until steel cut oats are done.  It&#8217;s hard to judge time on this because everyone likes the texture a little different.  I like it still a bit chewy.  You could also make this in the crockpot if you want an instant breakfast.  Add all the ingredients and set to low overnight.  Turn it on as late as possible because it gets mushy if it cooks too long!</p>

<li>1 cup butter</li>
<li>2 cups sugar</li>
<li>4 eggs</li>
<li>2 teaspoons vanilla</li>
<li>3 cups flour</li>
<li>1/4 teaspoon salt</li>
<li>2 teaspoons baking powder</li>
<li>2 cups sour cream or plain greek yogurt</li>
<li>2 teaspoons baking soda</li>
<li>1 cup pecans (chopped)</li>
<li>1/3 cup sugar</li>
<li>cinnamon (to taste)</li>
</ul></div>

<ol>
<li>Cream butter and sugar until light and fluffy.  </li>
<li>Add eggs one at a time, mixing between additions. </li>
<li>Add dry ingredients:  flour, salt, baking powder. (DO NOT ADD BAKING SODA)</li>
<li>In a separate bowl mix sour cream or plain greek yogurt and baking soda.  Wait until it begins to react, then add to batter and incorporate gently.</li>
<li>In another separate bowl, mix pecans, sugar and cinnamon.</li>
<li>Assembly:  In a greased 11&#215;15&#8243; pan, spread half of batter on bottom.  Sprinkle with half of cinnamon sugar mixture.  Spread last of batter on top.  Sprinkle evenly with the remaining cinnamon sugar mixture.  </li>
<li>Bake for 40 minutes at 350 degrees.</li>
