Thank you for your feedback!!!  I also tried a different method that makes it perfect every time!  I mix it with the dough hook for 30 seconds every 30 minutes for 2 hours.  So I end up doing the stretch and folds with the mixer.  Turns out I just hate getting my hands dirty every 30 minutes.  So I just put a wet towel over it in the Kitchen aid.  Then when I come back, I just lift off the towel and count to 30 while I let the mixer work.  It&#039;s great!]]></description>

I&#039;ve tried all the open bake methods and they just don&#039;t work for me since I have a gas oven so all the steam vents out :(. Good luck!  Let me know how it goes!]]></description>

I think you could definitely add more flour and just do a lower hydration bread.  It is definitely very sticky in the beginning, but as you do the stretch and folds it starts to keep its shape. I would definitely recommend doing the stretch and folds with wet hands! However you can try to add a bit more flour to see if you like that better!]]></description>
