I think you could do it either way.  If I made the dough and froze it immediately, I would defrost it for a couple days in the fridge.  Or you can ferment it first, freeze it and then bring it to room temperature and rise it a little just before you use it.  You could also ferment it, make it into pizza shapes and freeze them that way - or even top them and freeze them!  If you try it, let me know how it goes!]]></description>
