Last week I went to a friend’s house so our boys could enjoy an afternoon of airsoft in their huge yard. While the boys rode quads and shot at each other for hours, my friends and I gathered around a pot of this amazing soup. Every single person loved it and I knew it had to become a staple in our home! I love everything bagels. But since I have started being a Trim Healthy Mama, bagels are a thing of the past. However, these chicken tenders give me those same delicious flavors without the belly bulging carb count! I saw Rachael Ray make these years ago and loved them way back when. I was thinking that with all the incredibly high fat items that are usually found at Super Bowl parties, this would be an awesome lower fat, no carb option for those of us not wanting to indulge so much!
Years ago, my friend and I tried a soup from Rachael Ray’s talk show that we didn’t know would turn into a family hit. Sadly, I forgot about this recipe for a long time. But then I was walking through Costco at dinner time and my kids were wolfing down free samples while I was racking my brain to figure out how I could make a super fast dinner when I got home. I did not want to fall into the $1.50 hot dog or $1.99 pizza temptation that was going to hit me when I checked out. Then, before me was a piping hot, juicy rotisserie chicken and I remembered this recipe! It couldn’t be easier, and 20 minutes after I unpacked the car, we were sitting down to this deliciousness…
Chicken pot pie makes me think of my grandma. She and my grandpa would eat the dark meat and then save all the breasts in the freezer. Then, when it was time to make chicken pot pie for the extended family, she would cook up those breasts and make delicious stock. She would make that stock into a rich, creamy gravy and add vegetables from the garden and huge chunks of white meat. She topped it with the most delicious, flaky crust you can imagine. While I have occasionally made that delicious meal, I find that this chicken pot pie soup fits my schedule a bit better and the flavors are so similar that it still takes me back to my childhood! Yummy easy soups!
Fall is in the air and there’s nothing I love more than homemade soup and crusty bread once the chill sets in! I adore fast soups so much and I love adding new recipes into my repertoire that friends have passed on to me. I’ve adapted it a bit to make it my own and I hope you love it as much as I do.
Cream of Wild Rice Soup:
1 large onion, finely chopped
3 ribs of celery, finely chopped
3-4 carrots, finely choppedAfter they are soft, add 1/4c. butter and 1/4c. flour. Cook for about 1 minute then add:
8c. chicken stock*Bring to a boil to thicken and add:
3c. cooked brown rice (you can use 2 packages of Uncle Ben’s brown/wild rice combo and it’s so good)
1c. leftover cubed chicken or turkey
1 can fat free evaporated milk
Salt and pepper to taste
