I love spinach artichoke dip.  This is a quick recipe that will satisfy your ‘out to eat’ appetizer craving!  Plus, it’s super easy to make in advance, so you won’t waste all your time cooking when your Superbowl company arrives!

Cream:

2 – 8oz. packages of cream cheese

2 cloves minced garlic

1/2c. mayo

1/2c. grated parmesan

1/2t. garlic powder

1/2c. ramano

Add:

1 thawed package of frozen artichoke hearts, diced

1 thawed package of frozen chopped spinach, well drained (put it in towel and squeeze all the water out over the sink)

1/2c. mozzarella cheese

Mix well and put in 9×13 pan.  Bake at 350 until warm, brown, and bubbly.

While I fed my kids the delicate, crunchy crackers with dip, I am becoming a Trim Healthy Mama.  So my version was cucumbers dipped in the gooey goodness.  If you have some low carb guests, or you’re just looking for a way to add more veggies to your day, I think you’ll love it this way!
